In the PROTEIN4IMPACT project, the UMinho participates in WP2, focusing on the fermentation of fungi and yeast to produce mycoprotein using an air-lift bioreactor, evaluating the impacts and establishing benchmarks for the process. Additionally, UMinho reviews existing foods that contain mycoprotein and analyze trends related to novel foods in this area.
